When I make tomato sauce, my secret is to use a little sugar to cut the sharpness & acidity of the tomatoes. For this recipe, I used Organic Agave Syrup to substitute for the sugar-free diet.
Spaghetti with Chicken Sausage Marinara – Organic, No Gluten, Soy, Sugar
All ingredients are organic. I got all ingredients from my local supermarket, Publix.
1 package, Gluten-free Spaghetti noodles
1 lb Chicken sausage, cut into small 1/2″ pieces with kitchen shears
3 garlic cloves, minced
1 medium onion, chopped
2 cans, Organic Cento Crushed Tomatoes
1 T chopped fresh basil (from my garden)
2 tsp fresh oregano leaves (from my garden)
*you can substitute 1tsp each of dried basil and oregano if you can find organic brand
1 T salt
fresh ground pepper
1 T Agave Syrup (organic sugar substitute)
1. In a large pot over medium heat, add the sausage when the pot is hot. Fry the sausage until nicely browned, about 2-3 minutes. Add onions – fry 2 more minutes, stirring frequently so that nothing burns. Add garlic, cook additional minute, stirring frequently.
2. Add all remaining ingredients. Simmer for 25 minutes on very low heat. Stir the pot every so often. Taste – add salt and pepper to adjust seasonings.
3. While sauce is simmering, boil a pot of water and cook spaghetti according to package directions.
Serve with freshly grated Organic Parmigiano Reggiano.
